ORGANIC WINE
At the entrance of "Le Puy-Notre-Dame", 20 km from the city of Saumur, the Domaine de la Paleine covers 35 hectares of vineyards. The limestone hill of Puy-Notre-Dame is crisscrossed by more than a hundred kilometers of underground galleries dug in the tufa, the limestone grain typical stone of the Loire Valley.
The 35 hectares of Domaine La Paleine are mainly planted with Chenin and Cabernet Franc on a clay and limestone soil. The vineyards are grassed to encourage the vines to plunge deep into the tufa.
This unique limestone is a sponge, it absorbs excess water in the winter to return them sparingly when the vines needed. This is where we get the typical wines of Domaine de la Paleine. Structured but soft and fruity wines.
The Domaine de la Paleine began in 2010 conversion to organic viticulture. The vineyards were worked for 3 years to eliminate the use of herbicides. This decision is in the will of preserving our environment and the best expression of our terroir.
TAMINO : AOP SAUMUR PUY NOTRE DAME - RED
VARIETAL : 100% Cabernet Franc with yields limited to 30 hl / ha
VINIFICATION: Manual harvesting . Sorting and de-stemming, quickly vatted in new oak barrels . 4-week maceration with regular treading. Aging on the lees for 14 months.
TASTING NOTES
APPEARANCE: deep ruby dress and concentrated
NOSE: A nose of ripe black fruit such as currants and blackberries. Floral notes of violets, peonies and slightly liquorice .
PALATE: rich , powerful but fine tannins and silky at once, almost feminine. The ripe fruit ends with peppery notes . A long finish synonymous with great wine.
ARPEGGIO : AOP SAUMUR - WHITE
VARIETAL : 100% Chenin , yield 40 hl / ha
WINEMAKING : handpicking, many sorting to get a perfectly ripe harvest for dry white Directly pressed with a strict selection of the juices . Fermentation at 20 ° C , maturing 12 months in stainless steel .
TASTING NOTES
APPEARANCE: Light yellow color, very bright and clear .
NOSE: aromas of white flowers such as linden , typical of Chenin Blanc , fresh and zesty with notes of citrus and white fruits (apple, pear).
TASTE: Round , suave proving the maturity of the cheni. A long mineral and fresh finish.
A name perfectly chosen for this wine, which can play all the notes in harmony .
