The Cistercian Abbey of Fontfroide (Aude) is one of the most picturesque winery of France, Fontfroide offers a subtle chemistry between former monastic life and modern viticulture, forced to deal with international marketing and advanced technologies!
The style of the wine is made of « Freshness, Fruit and Finesse »
It is due to a slow and accomplished maturation, unexpected signature in Corbières. It represents the epitome of what a shady terroir is able to express, this is the « Terroir de Fontfroide ».
DEO GRATIAS RED : Syrah 65%, Grenache 35%.
Selection of the oldest vines
Destemming and crushing directly after harvesting. Fermentation under control temperatures (28 to 30°C).
Mechanical extraction methods of pumping-over and/or rack and return in order to have the best extraction.
Maceration during 25 days after fermentation.
Maturing partly in french oak barrels of 300 L (2nd and 3rd wines) for 14 months.
TASTING NOTES :
Color: Deep red with garnet tints.
Nose: Exciting nose with blackcurrant predominating and hints of cocoa and spices.
Palate: Creamy, generous palate, suave, finely oaked with supple tannins, going to a long finish of spices and pepper’s notes

DEO GRATIAS WHITE ; Roussanne 80%, Marsanne 20%
Destemming, maceration on skin before fermentation for the Roussane, clarification at 8°C for 36 hours.
Fermentation under controlled temperatures (15°C).
Aged in traditional semi-buried concrete vat covered by Languedoc’s bricks. Majority of the cuvée is fermented and aged in 300 L new French oak barrel with regular stirring to be finally kept 7 months in barrel.
TASTING NOTES :
Color: dark gold
Nose : intense aromas of white‐fleshed fruit, fine minerality with delicate toasty notes.
Palate : Creamy, well-balanced fresh palate combining fruit and fine oak in a long finish.
